Bentonite

Bentonite is a great general-purpose fining agent that is easy to prepare and does not adversely affect wine flavor. It is especially effective in correcting protein instability and preventing cloudiness. It does not remove tannins, so nothing else has to be used in conjunction with it. Bentonite needs hot water to rehydrate and should be stirred thoroughly until dissolved.

Use 2 teaspoons to 1/2 cup not water.
